Spicy Moroccan Inspired Flat Bread Pizza
Flat Bread Ingredients:
- 2 Medium Sized Chicken Breasts
- 2 Stonefire Artisan Flatbread
- 2 Cups of Shredded Mozzarella Cheese
- Micro-green Mix - Micro Mustard Greens + Cilantro
- Olive Oil
Chicken Seasoning Ingredients:
- 1 Teaspoon Cumin
- 1/2 Ground Coriander
- 1 Teaspoon Salt
- 1/2 Teaspoon Cayenne
- 3/4 Teaspoon Cracked Black Peppercorns
- 1/2 Teaspoon Cinnamon
Moroccan Pizza Sauce Ingredients:
- 8 oz. Can Crushed Tomatoes
- 1 Tablespoon of Cilantro
- 1 Clove of Garlic - Minced
- Salt & Pepper to Taste
- 1/2 Teaspoon of Cumin
- A Sprinkling of Red Pepper Flakes
Yogurt Sauce Ingredients:
- One Small Lemon
- 5 oz. Plain Greek Yogurt
- 1 Tablespoon Cilantro
- 1 Teaspoon of Cumin
Directions:
1. Start by mixing together the spice rub for the chicken. In a small bowl, add all of your spices and mix together with a fork.
2. Dice up your chicken into small pieces. Remember this is going on top of a pizza so cut it into pieces that will give you a good bite but not so big that you won't be able to fit a whole bite in your mouth. Add your chicken to the bowl with the spice rub and toss to coat.
3. In a skillet, over medium high heat, cook your chicken with a light drizzle of olive oil.
4. While your chicken is cooking, mix your pizza sauce. Add your crushed tomatoes with diced garlic and some fresh chopped cilantro. Season it to taste with salt, pepper, cumin and red pepper flakes. You won't want the sauce to be too spicy. (Unless you don't value your taste buds. The chicken packs a ton of heat so you'll want the sauce to only be mildly spicy.)
5. Next, mix your yogurt sauce. Dump the yogurt into a small mixing bowl and squeeze in about half of a lemon. Season to taste with some pepper and a small amount of cumin. You'll want to keep this in the fridge while you're finishing things up. The coolness of the sauce creates an amazing temperature difference on the final product.
6. Preheat your oven to 400* F
7. Lay your flat breads out on a sheet pan and brush with a thin layer of olive oil over the top. You don't want large puddles of oil but just enough that the top is moist.
Grab your sauce and split it evenly between the two flat breads. The first time we made this we went pretty sparingly on the sauce but you'll want to heap it on there. It seems a little dry without.
8. Top the sauced flatbreads with heaping piles fo cheese and the cooked chicken pieces.
9. Once your oven is preheated, place the sheet pan in the oven and cook until the cheese has melted and is all bubbly and delicious.
10. After the cheese has melted thoroughly, remove from the oven and let cool 10 minutes. Slice your flat breads and top with your micro mustard greens and cilantro.
11. You can either drizzle the yogurt sauce over the top like we did or use it like a dipping sauce if that's how you prefer to crunch your pizza! You can also squeeze the other half of the lemon over top for a little added freshness.
